The most widely cultivated variety is the Nanko ume, said to be the best in Japan. With thick flesh and small seeds, the Nanko ume is optimal for making into umeboshi. The Nanko ume that has an excellent texture also has a thin skin and requires a lot of manual effort to process.
It takes many people to produce the best umeboshi in Japan to harvest them during the hot and humid rainy season, dry them during the scorching heat of the midsummer period, and sort and pack them, which must be done by hand.
