Santoku Konishi Kashiho


There is a type of monaka (bean‐jam‐filled wafer) that has been produced in Imafukumachi in the center of Tanabe for over a century since 1907. Santoku Konishi Kashiho is the originator of the small, bite-sized monaka, a famous Kinan sweet called yuzu monaka.
It started with the idea of using yuzu, when the shop founder, Sosuke, who was an engineer at a fish canning factory, came up with the idea of making confections with the fragrance of yuzu.
It was 1907 when he utilized processing techniques to preserve the yuzu paste that was difficult to do and changed careers.
